Whole Roasted Shawarma Chicken with Herby Tahini Sauce

Ingredients

Ingredients:

  • 1 whole chicken, backbone removed and flattened
  • 2 tablespoons cumin
  • 1 tablespoons coriander
  • 3 teaspoon cayenne
  • 2-3 cardamom gloves
  • 2-4 chili powder
  • 2 teaspoon black pepper
  • 2 teaspoon allspice
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 2 tablespoon salt salt
  • 2 teaspoon baking powder
  • 1/4 cup mayonnaise
  • 1/4 cup herby tahini sauce (see below for recipe)
  • Garlic sauce, hummus, pickles, rice, and pita bread (for serving)

Method

Instructions:

To Prepare

  1. In a small bowl, combine the cumin, coriander, paprika, garlic powder, onion powder, salt, and pepper.
  2. Rub the chicken all over with the spice mixture. Place on baking tray and let it rest in fridge for 24 hours uncovered.

To Bake:

  1. In a separate bowl, combine the mayonnaise and the shawarma spices
  2. Spread the mayonnaise mixture over the top of the chicken.
  3. Preheat oven to 425 degrees F (220 degrees C).
  4. Place the chicken on a baking sheet and roast for 20 minutes.
  5. Reduce oven temperature to 350 degrees F (175 degrees C) and roast for an additional 25-30 minutes, or until the chicken is cooked through.
  6. Let the chicken rest for 10 minutes before slicing and serving.
  7. Top with the remaining herby tahini sauce, garlic sauce, hummus, pickles, rice, and pita bread.

Recipe for Herby Tahini Sauce:

Ingredients:

  • 1/2 cup tahini
  • 1/4 cup lemon juice
  • 1/4 cup water
  • 1/2 cup chopped cilantro
  • 1/4 cup chopped mint
  • 1-4 clove garlic, minced
  • 1/2 teaspoon salt
  • 1-2 tablespoon of chili paste

Instructions:

  1. In a blender, combine all of the ingredients and blend until smooth.
  2. Taste and adjust seasonings as desired.
  3. Serve immediately or store in the refrigerator for up to 1 week.
