Update on COVID-19 preparedness
Ingredients
For the meatballs:
1 lb Crescent Foods ground chicken
1 tsp baking soda
1 tsp garlic powder
1 tsp onion powder
1/2 tsp black pepper
1 tsp salt
1/4 cup panko breadcrumbs
1/2 a small yellow onion, finely diced
1 large egg
2 tbsp oil
1 tbsp butter
For the sauce:
2 tbsp butter
3 tbsp flour
1/2 cup chicken or beef broth
1/2 tbsp dijon mustard
1.5 cups heavy cream
3 tbsp Worcestershire sauce
Salt to taste
1 tsp dried parsley
Method
- For meatballs, mix the chicken with the spices, breadcrumbs and egg. Roll into whatever size balls you like and set aside.
- Heat a pan on medium heat and add the oil and butter, then add the meatballs. Let them cook and sear for 2 minutes on each side and remove.
- For the sauce, add the butter to a pan on medium heat and melt. Add the flour and whisk well until no longer clumpy. Add the mustard, Worcestershire sauce, broth and heavy cream and mix. Add salt to taste, parsley and mix until slightly thickened.
- Add the meatballs and toss to coat, then cover and let them simmer on medium-low for 10 minutes, or until completely done. Serve with mashed potatoes and lingonberry or cranberry jam.
