Update on COVID-19 preparedness
Ingredients
- 2 packets Crescent Foods Boneless Lamb Leg Steak
- 5 garlic cloves
- 1/2 yellow onion
- 1 cinnamon stick, 2 bay leaves, 4 cardamom pods
- 1 tbsp makloubeh spices
- 1 tsp 7 spice
- 1 tsp coriander powder
- salt to taste
- 1/2 tsp black pepper
- 1 tsp garlic powder, 1 tsp onion powder
- 1/2 tsp turmeric
For the rice:
- 1.5 cups jasmine rice, rinsed and soaked
- 1 tsp 7 spice
- 1 tsp coriander powder
- 1 tsp salt
- 1 tsp makloubeh spice
Any vegetable(s) of your choice.
Method
- Add oil to a pot and the whole garlic cloves and 1/2 onion. Sauté until fragrant and add the lamb. Sauté until a little color develops and add the whole spices, and black pepper. Add water to cover and let it boil for 15 minutes.
- Discard the liquid and whole spices. Add the lamb back to the pot and add the rest of the powdered spices in along with enough water to cover.
- Let it boil for 5 minutes before letting it simmer for 30 minutes or until lamb is fully cooked. Strain the broth and keep on the side. Add the spices to the washed and soaked rice and set aside.
- Start layering the vegetables in a pot and add the lamb and rice. Add about 2 cups of reserved broth and let it boil before simmering for 20 minutes.
