Update on COVID-19 preparedness
Ingredients
For the Lamb
1 pack Lamb Shoulder Chop, deboned and diced
1/2 onion1 Tblspn taco seasoning
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp garlic powder
1/4 cup taco sauce or salsa
For the fajita bites
1 pack snacking peppers
Cooked lamb
1 cup shredded cheddar
1 jalapeno, diced
1/2 cup Sour cream, for topping
1 diced tomato, for topping
1/2 diced onion, for topping
Method
For the Lamb
Place all the ingredients except the taco sauce in a chopper and blend till everything is finely chopped and mixed through. Cook in 1 Tblspn oil until the lamb gets some color on it. Then add the taco sauce and a splash of water, cover and cook till the lamb is tender. Set aside and cool.
For the fajita bites
Cut the peppers in half. Place a spoon full of the cooked lamb into the peppers. Place in a greased baking dish. Then top off with the shredded cheese and jalapeños. Bake at 400 F for 15-20 minutes.Then take the dish out of the oven and transfer the peppers to your serving dish. Top with sour cream, tomatoes and onions. Serve immediately.
