Grilled Chipotle Pepper & Mesquite BBQ Chicken Burgers

As the temperature begins to warm up, what better way to have dinner than off the grill?

Ingredients

  • For the Dish:
    • 8 Grilled Chipotle Pepper & Mesquite BBQ Chicken Burgers
    • 3 cups Purple Cabbage Slaw
    • 4 Hard Boiled Eggs
    • ½ cup Peach Sriracha Sauce
    • 8 Sesame Hamburger Buns
  • Chipotle Pepper and Mesquite BBQ Chicken Burgers:
    • 2 lbs Crescent Foods Ground Chicken
    • 1 Chopped Jalapeno, seeds included
    • 1 tbsp ground Chipotle Pepper
    • 1 tbsp Chipotle Pepper Flakes
    • 2 tbsp Chopped fresh cilantro
    • 1 tbsp Sea Salt
    • 2 tsp Black Pepper
    • 1 tsp Cayenne pepper
    • 2 tbsp Mesquite flavor BBQ seasoning
    • 6 oz Chopped White Onions
    • ½ cup Panko Crumbs
  • Purple Cabbage Slaw:
    • 2 cups Thinly slice red cabbage
    • ¾ cup Julianne carrots
    • ¼ cup Julianne sweet onions
    • 1 tbsp Chopped fresh cilantro
    • 1 Juice of lime
    • 2 tbsp Apple cider vinegar
    • 3 tbsp Olive oil
    • 2 tsp Sea salt
    • 1 tsp granulated sugar
  • Peach Siracha Sauce:
    • 4 tbsp Sriracha Sauce
    • 4 tbsp Peach Jam

PREPARATION

  1. Chipotle Pepper & Mesquite BBQ Chicken Burgers:
    1. In a large mixing bowl, place the ground chicken
    2. Prep and measure the cilantro, jalapeno and onion. Add to the bowl.
    3. Measure the rest of the ingredients and add to the bowl.
    4. Gently mix in all the ingredients into the ground chicken. Make sure to not over work the chicken.
    5. Place in the refrigerator for 1 hour before grilling.
    6. Cook until internal temperature reaches 165*F in a calibrated thermometer.
  2. Purple Cabbage Slaw:
    1. In a mixing bowl, combine all ingredients and mix. Keep in the refrigerator until ready to use.
  3. Peach Siracha Sauce:
    1. In a bowl combine the 2 ingredients and mix. Keep in the refrigerator until ready to use.
  4. To Assemble:
    1. Coat both of the inner sides of the burger bun with the Peach Siracha Sauce
    2. Slice the hard-boiled eggs and place them evenly on the bottom piece of the burger bun
    3. Place the burger patty over the eggs and top with the Purple Cabbage Slaw and some more sauce
    4. Top with the other half of the burger bun
  5. Enjoy!
