Chicken Swedish Meatballs

Ingredients

For the meatballs:

1 packet Crescent Foods ground chicken

1 tsp baking soda

1 tsp garlic powder

1 tsp onion powder

1/2 tsp black pepper

1 tsp salt

1/4 cup panko breadcrumbs

1/2 a small yellow onion, finely diced

1 large egg

2 tbsp oil

1 tbsp butter

 

For the sauce:

2 tbsp butter

3 tbsp flour

1/2 cup chicken or beef broth

1/2 tbsp dijon mustard

1.5 cups heavy cream

3 tbsp Worcestershire sauce

Salt to taste

1 tsp dried parsley

Method

  • For meatballs, mix the chicken with the spices, breadcrumbs and egg. Roll into small/medium size balls and set aside.
  • Heat a pan on medium heat and add the oil and butter, then add the meatballs. Let them cook and sear for 2 minutes on each side and remove.
  • For the sauce, add the butter to a pan on medium heat and melt.
  • Add the flour and whisk well until no longer clumpy.
  • Add the mustard, Worcestershire sauce, brother and heavy cream and mix.
  • Add salt to taste, parsley and mix until slightly thickened.
  • Add the meatballs and toss to coat, then cover and let them simmer on medium-low for 10 minutes, or until completely done. Serve with mashed potatoes and lingonberry or cranberry jam.
