Sundried Tomato & Basil Chicken Breast with a Grapefruit and Kale Salad

This dinner will be ready in no time with our pre-seasoned Sundried Tomato and Basil Chicken!

    • 1 Packet Crescent Foods Sundried Tomato Basil Chicken Breast
    • Salad:
      • 5 C Baby Kale
      • 20 PCS Crispy Portobello Croutons – medium dice
      • ¼ C Roasted Whole Almonds
      • 2 TBSP Dried Cranberries
      • ¼ C Red Onions – shaved
      • 20 EA. Grape Tomatoes
      • ½ C Cambozola Cheese – cubed
      • 3 EA. Radish – thinly sliced
      • Grapefruit Vinaigrette
    • Grapefruit Vinaigrette:
      • ½ C Fresh Grapefruit Juice
      • ¼ C Rice Vinegar
      • ¾ C Olive Oil
      • 1 TBSP Honey
      • ½ C Pink Grapefruit Segments
      • ½ tsp Sea Salt
      • ½ tsp Fresh Black pepper
      • 2 TBSP Minced Shallots
    • Portobello Croutons:
      • 20 PCS Medium Diced Portobello Mushrooms
      • ¼ C All- Purpose Flour (seasoned with granulated garlic, sea salt and black pepper)
      • 1 Egg – beaten
      • 1 TBSP water (added to egg)
      • 1 C Panko Crumbs


  1. Bake or Cook the Sundried Tomato Basil Chicken Breast as desired
  2. In a mixing bowl combine all salad ingredients, and mix together
  3. For the vinaigrette, combine all ingredients in a small bowl and whisk together, making sure that all ingredients have been combined. Add the vinaigrette to the salad and combine, then set in the fridge to chill
  4. For the croutons, using a shallow dish, place the seasoned flour, egg wash and panko crumbs in each one of the mushrooms. Coat the
  5. Portobello with the flour, then the egg wash and then coat with panko.  
  6.  Heat enough oil to 325*F for frying the breaded mushrooms. Fry until crispy. (You can also use an air fryer or oven for this step)
  7. In your plate, place your salad and top with the croutons and chicken, and enjoy!
