Ingredients
Salad
- 12 Crescent Foods Chicken Nuggets
- 1 red bell pepper finely diced
- 1 romaine lettuce bundle chopped
- ½ cup of corn kernels
- 1/3 cup of black beans
- 2 avocados sliced
- 1/3 cup of chopped red onions
- 1 tbsp taco seasoning
Dressing
- 1 cup of plain yogurt
- 1 tbsp paprika
- ½ a lemon’s juice
- 1 tbsp taco seasoning
- Handful of fresh Basil
- Salt & pepper to taste
Method
- Cook the chicken nuggets by baking in the oven as shown on the package instructions. Then, broil for 2 minutes for extra crispiness.
- Sprinkle the chicken nuggets with taco seasoning. Set aside to cool slightly.
- To make the dressing, blend all the ingredients together. Taste and adjust as needed.
- In a large bowl, mix together all the vegetables.
- Cut the chicken nuggets into half or quarters and toss the nuggets into the vegetable mix.
- Drizzle dressing over the salad.
