Southwestern Chicken Salad


A super easy, filling, and healthy salad perfect for a light and quick dinner.

  • 12 Crescent Foods Chicken Nuggets  
  • 1 red bell pepper finely diced 
  • 1 Romaine Lettuce bundle chopped 
  • ½ cup of corn kernels 
  • 1/3 cup of black beans 
  • 2 avocados sliced 
  • 1/3 cup of chopped red onions 
  • tbsp taco seasoning 


  • 1 cup of plain yogurt 
  • tbsp paprika 
  • ½ a lemon’s juice 
  • tbsp taco seasoning 
  • Handful of fresh Basil 
  • Salt & pepper to taste 


  1. Cook the chicken nuggets by baking in the oven as shown on the package instructions. Then, broil for 2 minutes for extra crisp. Sprinkle the chicken nuggets with taco seasoning. Set aside to cool slightly. 
  2. Now, make the dressing. Just blend all the ingredients together. Taste and adjust as needed.  
  3. In a large bowl, mix together all the vegetables. 
  4. Cut the chicken nuggets in half or quarters. Toss nuggets in the vegetable mix. Add the dressing to this as well or just drizzle over the top. Do as you like!
