Soft beef and veggie tacos

  • 1 pound Angus Ground Beef
  • 1/2 teaspoon chili powder
  • 1/8 teaspoon pepper
  • 1/2 cup tomato salsa, divided
  • 8 small whole-grain tortillas
  • 1/2 cup shredded romaine lettuce
  • 1/4 cup shredded reduced-fat cheddar cheese
  • Green-onion strips


  1. Cook beef on medium heat. Drain well and return to pan. Mix in the chili powder and pepper; cook for about 1 minute. Stir in cup salsa; heat through.
  2. Warm the tortillas in the oven for a few minutes and spoon on meat mixture. Top with lettuce, cheese, and the remaining cup of salsa. Roll up and tie each taco with an onion strip.
