Update on COVID-19 preparedness
Ingredients
- 2 packages Crescent Foods Shawarma Seasoned Chicken Thighs
- 1 large or 2 small baguettes, warmed
- 1 cucumber, thinly sliced
- Mango Salsa (recipe below)
- Spicy Mayo (recipe below)
- Cilantro, for garnish
Mango Salsa
- 2 ripe mangos, diced
- 1 red bell pepper, finely chopped
- 1-2 jalapeños, seeds removed and minced
- 1/2 red onion, finely chopped
- 1 lime, juiced
- Chopped cilantro
- Kosher salt
Spicy Mayo
- 1/2 cup mayonnaise
- 1 ½ tablespoons sriracha
- ½ teaspoon sugar
- Kosher salt
Method
- Cook Shawarma seasoned chicken thighs according to package directions. Meanwhile, divide the baguette(s) into 4 pieces and slice each one vertically (like a hot dog bun). Wrap in aluminum foil and warm in oven (optional but recommended)
- Prepare the mango salsa by combining mango, pepper, 1 jalapeño, onion, and lime juice in a medium mixing bowl. Season with a pinch of Kosher salt and stir in a small handful of chopped cilantro. Taste and add another minced jalapeño if desired.
- In a small mixing bowl, combine spicy mayo ingredients and season with Kosher salt.
- Arrange 4-5 slices of cucumber alongside one side of the baguette. Wedge a few pieces of chicken next to cucumber and top with mango salsa, spicy mayo, and cilantro.
