Ranchero Style Beef Tostadas

with Spicy Refried Black Beans and House Made Guacamole

Yield: 4 servings

Ingredients

For the Tostada:
8 ea. Tostada Chips
2 C. Refried Black Beans
2 C Shredded Lettuce
2 ea. Marinated Ranchero Style Steak – Grilled to desire doneness and thinly sliced
2 C. Guacamole
¾ C. Pico De Gallo
¾ C. Onion Relish
1 C. Crumbled Queso Fresco
Sriracha Sauce Drizzle

Ranchero Style Steak:
2 ea. 10 oz Crescent Foods Ribeye Steaks
½ C Ranchero Seasoning

Spicy Refried Black Beans:
1 – 15 oz Can Cooked Black Bean – drained and reserve liquid
1 C. Onions
2 ea. Jalapenos with seeds
4 ea. Garlic Cloves
1 tsp. Coriander
1 tsp. Cayenne Pepper
1 tsp. Cumin
1 tsp. Paprika
1 TBSP. Chili Powder
1 tsp. Sea Salt

Guacamole:
2 ea. Avocados, ripe but firm
¼ C. Minced red onions
3 ea. Garlic cloves, crushed
2 TBSP. Chopped Fresh Cilantro
1 ea. Jalapeno, finely chopped
2 ea. Limes, juiced (try avoiding using lime juice in a bottle)
½ tsp. Sea Salt

Two Onion Relish:
¾ C Sweet Onion – Minced
¾ C Red Onion – Minced
3 ea. Limes, juiced
½ C. Chopped Fresh Cilantro
½ tsp. Sea Salt
In a mixing bowl combine all ingredients. Set aside & chill until needed.

Pico De Gallo:
1 ½ C. Roma Tomatoes
½ C. Sweet Onion, diced
3 ea. Garlic Cloves, chopped
1 ea. Jalapeno Pepper, diced
½ C. Fresh Cilantro, chopped
2 ea. Lime
2oz. Olive Oil
Sea Salt to Taste
In a mixing bowl combine all ingredients. Set aside & chill until needed.

PREPARATION

Ranchero Style Steak:
Place the steak in a mixing bowl and sprinkle the seasoning between the 2 steaks. Set aside to allow flavors to set in. About ½ hour. On a hot grill or grill pan cook the steaks to desire doneness. Once steaks are cooked let steaks rest for about 4 minutes before slicing against the grain.

Spicy Refried Black Beans:
In a medium nonstick saucepan, heat 2oz of olive oil over medium heat. Add the onions, jalapeno and garlic. Sauté for 1 minute until fragrant making sure the garlic does not burn. Add the beans and the seasoning. Fry the beans in the hot oil with the spices for about 2 minutes stirring often to make sure mixture does not burn. Add the reserved bean liquid to the mixture, turn the heat to medium low and cook for 10 to 15 minutes. Stir often. Place the refried bean mixture into a food blender and blend until smooth. About 2 seconds. Serve immediately.

Guacamole:
Slice avocado in ½, remove the pit and place in a mixing bowl. Mash the avocado with a fork to your desired consistency. Add the remaining ingredients and stir together.

Two Onion Relish:
In a mixing bowl combine all ingredients. Set aside & chill until needed.

Pico De Gallo:
In a mixing bowl combine all ingredients. Set aside & chill until needed.
