Mediterranean Chicken Pasta Salad

  • 8 pieces of Crescent Foods Chicken Nuggets
  • 1 lb. pasta of choice cooked (rotini is best)
  • 1 tomato diced
  • 1 cucumber diced
  • ½ cup of olives cut in half
  • Handful of Fresh Spinach
  • Handful of Fresh arugula
  • 1/3 cup crumbled feta cheese
  • 2 tbsp. dried oregano
  • 2 tbsp. dried cranberries (optional)
  • Salt and pepper to taste



  • 1/3 cup olive oil
  • 1 lemon’s juice
  • Salt & pepper to taste
  • 1 tbsp. dried oregano
  • 2 tbsp. white vinegar
  • 2 cloves minced garlic
  • 2 tbsp. mustard


  1. Bake chicken according to package instructions. Cut the nuggets in half and set aside.
  2. Mix dressing ingredients together
  3. In a large bowl, mix together the chicken, pasta, and veggies then add all the dressing and stir together  (tip: add the chicken last right before serving to remain crisp)
  4. Serve room temperature or cold
