Ingredients
1 whole Crescent Foods chicken
2 Tbsp Mandi Rub
2 tsp baking powder
Method
- Spatchcock the chicken by removing the backbone. This will allow the chicken to lay flat and promote even cooking.
- Mix about 2 tablespoons of Mandi with 2 teaspoons of baking powder. The baking powder will ensure the skin gets crispy
- Apply the Mandi-Baking soda mix to the entire chicken
- Let chicken sit overnight in fridge. This will give the salt time to penetrate into the meat (aka dry brining)
- Cook chicken in grill (indirect heat) or oven/air fryer at 325F for 1-2 hours until the internal temperature is 165F in the thickest part of the breast.
