Chipotle Chuck Roast

Ingredients

1 Crescent Foods Boneless Chuck Roast
1 tbsp smoked paprika
1 tbsp thyme
12 oz beef broth
2 bay leaves
2 tbsp cornstarch

For the sauce

4 oz sour cream
Juice from a small lime
4 oz can of adobo peppers
A little sauce from the adobo peppers
Salt and pepper

Method

  1. Add the chuck roast into the Instant Pot and season it with salt and pepper. Proceed to sear it on both sides.
  2. Add smoked paprika, thyme (fresh or powdered), 12 oz of beef broth, garlic, and bay leaves into the Instant Pot.
  3. Pressure cook for 90 minutes until the chuck roast is cooked to perfection.
  4. Once done, take the chuck roast out and add 2 tbsp of cornstarch to make the gravy. Stir well until you reach your desired thickness.
  5. Pour the gravy onto the chuck roast and let it sit for a few minutes.
  6. To create the sauce, in a small food processor use 4 tablespoons of sour cream, 1 or 2 canned adobo chipotle peppers and 1 tablespoon of the adobo sauce from the can, a couple pinches of salt and the juice of 1 small lime. Give it a good pulse, then adjust to taste.
  7. Serve the chuck roast with the sauce on top and enjoy!
