Chicken & Potato Croquettes


1 chicken breast
2 potatoes
Salt to taste
Red chill flakes to taste
1 cup shredded cheese
2 teaspoons umami powder #traderjoes
1/4 bunch cilantro
1 jalapeño
Bread crumbs
2 eggs


  1. Boil your potatoes till done. Don’t forget to salt your potato water. Once they are cooled skin them and set aside.
  2. In a pot boil your chicken with garlic, salt and pepper. When done take out your chicken and add it to you bowl with your potatoes.
  3. With a chopper shred your chicken and mash your potatoes together. Finely chop your cilantro and jalapeño and add it to your potatoes and chicken and mix well.
  4. Add your shredded cheese and mix well. Season with salt, red pepper flakes and umami powder.
  5. Wet your hands and form small balls. Roll in breadcrumbs and then egg and again in breadcrumbs.
  6. Heat oil in the pan you will fry in on medium heat. When the oil is hot you will put the balls in gently and fry till golden brown.
  7. Drain on paper towels and serve with dipping sauce of your choices
