Update on COVID-19 preparedness
Ingredients
2 Cups Crescent Foods ground chicken
1 ½ C AP flour
1 ½ C Corn meal
1 C Fresh corn
½ C Diced Onions
¼ C Diced Jalapeno
1/3 C Chopped Cilantro
1 TBSP Baking powder
2 TBSP Granulated sugar
1 TBSP Sea salt
1 tsp Garlic powder
1 tsp Onion powder
1 tsp Smoked paprika
½ tsp Black pepper
1 tsp Ground chipotle pepper
1 TBSP Chipotle flakes
2 LG Eggs – beaten
2 C Buttermilk
1 Stick of Unsalted butter – melted.
Chipotle Lime Dipping Sauce
Ingredients:
½ C Plain yogurt
1 TBSP Apple cider vinegar
1 TBSP Yellow mustard
½ tsp Sea salt
1 tsp Cilantro
2 tsp Chipotle powder
1 tsp Garlic Powder
½ tsp Onion powder
2 TBSP fresh lime juice.
Method
- Measure all ingredients.
- Heat 1 TBSP of oil in a large skillet over medium heat, once oil is hot adding ground chicken and all the seasoning spices and cook for about 10 minutes. Break up large lumps of meat using a spoon. Cool in the refrigerator.
- In a medium size mixing bowl combine the flour, corn meal, cilantro, corn, onion and baking powder.
- Add the cooked ground chicken, eggs, buttermilk, and melted butter and stir until combined.
- Heat vegetable oil to 350*F.
- Using a small ice cream scoop, create a 1 – inch round balls (1oz EA) or they can be finger shaped. Repeat with the remaining mixture.
- Without overcrowding the fryer of pot drop dumplings into the hot oil (they should fully submerge) and cook to golden brown on the outside, about 2 – 3 minutes. Transfer to a paper towel to drain. Repeat with remaining dumplings.
- Chipotle Lime Dipping Sauce
- In a mixing bowl combine all ingredients. Place in the refrigerator until ready to serve.
